I'm a big believer in less is more especially when it comes to something as fantastic as steak. The most important thing is to get good quality fresh meat from your local butcher. I also recommend having a bundle of fresh rosemary in your kitchen at all times. This recipe calls for fresh rosemary that has slightly dried, making it easier to crush. Using fresh rosemary gives you much more flavor.
Servings: 3-4 large steaks
You will need:
- 2 tsp peppercorns
- 1 Tbs kosher salt
- 1 tsp freshly dried rosemary
- A Bare Stone mortar and pestle
First add the peppercorns to the mortar and pestle and grind with the pestle thoroughly until all corns are crushed. Then add the rosemary to the crushed peppercorns and grind until the leaves are broken up. Add the salt last and gently grind all three ingredients together until combined. Sprinkle liberally on each side of a raw steak and cook as desired.
